Kiridashi Kogatana marking knives are made by laminating a high carbon very hard steel (which will take an edge like no other steel) to a softer but tough steel backing. Available in three different widths - 9, 12, and 18mm, the latter being the most commonly used whilst the smaller sizes are for more delicate marking. Hand forged / hand made kiridashi (AKA Kogatana) which are made entirely from th steels stated in each description. Rough ground, then hardened to Rockwell c~60/61 at the appropriate temperature for the particular steel, warm oil quenched, tempered at least once and then final grinding.
