Cutting a tenon with the grain produces a really smooth and consistent cheek. Also, table saw height adjustment is rough at best. A tenoning jig allows you to make micro-adjustments and dial things in to perfection. And because the boards are clamped and the jig rides in the miter slot, the work is pretty well locked in place.

Using a dado stack, something as simple as hand pressure can make small variances in the final thickness of the tenon. While it doesn't really save you time in setup, it could save time if you have to make more tenons at some point. The jig holds it's settings well between uses. I nearly always make my tenons using the dado stack. I find the surface good enough and I can use a shoulder plane to do the final tuning if needed.

But I suppose some folks are truly looking for perfection and a surface that requires absolutely no work right off the saw. I can't speak for everyone's use-case though. But it's pretty clear that in today's market, a table saw tenoning jig is a tough sell. Wow, that thing took some serious thinking through.

If you did it right, it will be. Most times, if centering is crucial, I'll do a pass from each face using the router. That ensures a centered mortise. So personally, I'm cool with a guaranteed centered tenon if it simplifies setup. The question I have is how much more complicated is it to setup if you want an offset tenon?
